Not pancakes anymore... now, it's Vegan low-fat buckwheat waffles! Hmm, sounds like Sunday mornings at our house.
Here's mine: Crack two eggs into bowl, dump on a good bit of Roger's 9-Grain Cereal (suitable for cooking/eating), and wisk a bit, just using a spoon. Add a bit shy of one cup of Aunt Jemima's Buttermilk Pancake mix. (I know, not scratch, but it works for me) Chop half a Granny Smith apple into fine slivers, sprinkle over top, with the object being to get them separated and coated into the flour. Add just shy of a cup of milk, your choice. Stir until just blended, don't puree Meanwhile, prep. a couple of things: 1. In a gravy boat or similar, put a good shot of corn syrup, dash of vanilla extract, shot of molasses (blackstrap or what have you), and a shot or two of water. Stir up a bit, to semi-mix, then microwave for 30 seconds on high. Alternately warm it up on stovetop in small sauce pan. 2. Put a few tablespoons worth of frozen blueberries in a bowl and run through the microwave on a defrost cycle. Again, small saucepan on stove works. Back to the pancakes: Bring a griddle to 350~375 degrees fahrenheit (a little trial and error is needed, depends on your griddle's theromostat). Put the batter onto the griddle, in a "six pack" of 1/4 cup dollops. If there's any left over, distribute uniformally to each. Flip them just as soon as possible, when there's a hint of bubbles. Let them go maybe 2~3 minutes on the second side, give them a good chance to rise. Serve spread lightly with marg/butter, topped with a dollop of yogurt, then blueberries, and finally a drizzle of the syrup.
Oh, I definitely meant pasties. ....with some rasberries. The wifey keeps dropping hints of how nice it would be if I took the time to cook a meal once in a while, so I made her breakfast on Valentines Day.
Pancakes *are* round. You mean something not quite so flat. Do you prefer whipped cream, or maple syrup?
In case anyone would like to try my waffles, here is the original recipe: 1 large banana 1.5 cups whole wheat flour 1/2 cup oats 2 tsp baking powder 2 tsp cinnamon 1/2 tsp nutmeg 2 cups water Blend in blender until almost smooth. Bake in waffle iron. You will need to oil the waffle iron, as the batter has almost no fat at all. Note: the riper the banana, the darker the waffles will be, and the more likely that they will stick to the waffle iron, hence will need more oiling. Gluten free, no-fat, vegan Buckwheat waffles: Same as above, but instead of WW flour, I blend 1.5 cups of raw buckwheat groats in the water, using the blender, until smooth. Then, I add the rest of the ingredients. Amazing! Note: I've tried using buckwheat flour (pre ground) and it turns out crappy.
They sound good, and I'd eat them if you served them to me, but I'd be reluctant to make them due to the may-stick-to-the-waffle-iron property.
Okay, I tried them, but the banana peel got all stringy in the blender. If you are really worried, add a tablespoon of oil to the batter. Make sure you also oil the iron. Tom
I made pancakes for supper tonight, because that's what the kids wanted. Oatmeal, with lots of added fruit - blueberries, a banana, and a mango. Kinda tasty, though the extra sugar made them more prone to burning, so I had to be extra careful. I sure love a big ol' cast iron frying pan.
Don't use normal Pam type of non-stick spray on a waffle iron or grill. At higher temperatures this stuff will turn into glue, completely destroying the non-stick characteristics. I managed to wreck a couple of appliances learning this the hard way. If you want to use a commercial non-stick spray for high temperature applications, Pam makes a special variety for grills. Tom
The non-stick stuff (Teflon?) doesn't seem to last very long. After a couple of years, bits of it start ending up in the food, and that can't be good. A few years ago I made my own. I bought a big unseasoned cast iron frying pan, took the sander to it, and then seasoned it with oil in a hot oven. I've never seen a smoother one.
