I didn't think to keep mileage records (as we know, our Prius Cs barely sip gasoline!) when I drove an elderly customer to his appointments in 2016---for my "business expense". Is there a way I can find in the dashboard "computer" my beginning & ending odometer readings for 2016 (i.e., from January 1 through December 31)?

I'm not aware of any way to do this. You may have to simply estimate using the average miles per trip times the number of trips.
Little late, but... keep in mind that deducting all of your mileage for the year is a no-go unless you ONLY drove the car for your elderly client's trips, and even then the miles from your home to his place and back would generally not be deductible.
