There a write up on how to do the Head Gasket on the 3rd gens? Most the video's while nice, don't give a whole lot of instructions, or a list of tools to need. I downloaded the Factory Repair Manuals, and it to is nice, in a well I'm sorry to get you up at 5, you could have slept in till 9am sort of way. You have to jump all around, you need a list of pages to figure out what is next. The blue INFO buttons do not work. (just the nature of the beast) Feel like this is something someone would have put together by now, and I can't seem to find it.
Repair Manual doesn’t, unfortunately. Infos there. But scattered. @Gasket masters USED to have a couple of great step by step videos, but took them down.

Ok I'll put something together. If more people had a step by step, feel like they would do it. Just Time, Effort, Tools.
Unfortunately, that video has been made private by gasket masters. I saw that video and it outlined exactly in step by step instruction all the tools needed, all the bolts that needs to be removed, and all the steps in head gasket replacement. Too good a video for a company doing just that to make a living.
Looks like the gasketmaster video is back online. One thing missing from that video is critical step of releasing chain tensioner after timing chain cover and tensioner has been installed. Just rotate crankshaft a little bit counterclockwise or if valve cover has not been installed yet, just press on the chain and chain guide from above with screw driver, depressing the timing tensioner and releasing it. Also watch gasketmasters 3rd gen prius engine swap video as that contains even better illustration of bolt locations for difficult to reach parts.
Well that is somewhat of an oversimplification. A certain amount of mechanical savvy and SKILL is needed too. If you have never pulled an engine apart before, it might be beyond YOUR skills too. But there has to be a first for everybody I guess. Just don't try to do this when you have a "deadline" for when it has to be back on the road.
