If I disconnect the Neg. terminal on the 12V battery in the back of Prius to install accessories can I just reconnect it without doing anything else? Will anything be affected?
Yes, you can do that. You'll lose a few settings; the clock, the Nav's search region, trip MPG history, and a variety of other things that aren't stored permanently.
