You're only blinding yourself if there is nobody in the rear seats. They protect nothing if nobody is back there.
I would recommend having someone sit in the car and try it out for a block or two just to make sure that the car doesn't shutdown on it's own....
Do a search on this forum. There was a thread started a week or two ago that has full diagrams on how to remove both front and rear seats.
I doubt "Everyone" is doing 80-85. Check that slow lane, bet you'll find some non-speeders.
