It could be that the engine water pump is going bad. To diagnose, use a scanner to monitor the engine coolant temperature.
Have you looked at the short and long term fuel trims?
Have you replaced the coin cell battery in the key fobs?
Let me correct that for you. In a Gen 3 Prius, the high temperature light goes on at 248F. I am guessing that a Gen 4 is similar.
It's not looking good based on the Dr Prius screenshots. 13 of the 14 battery blocks are bad.
